Woooo! It’s the first of the month. I can’t believe it’s already February! Today marks only 1 week left of our Paleo Challenge!

 

Lunch

-1/2 piece of roasted pork chop

-sauteed zucchini

-“mashed potatoes” (steamed cauliflower, bit of butter, coconut milk, salt and pepper blended up until smooth). I’ve tried to make these before with coconut oil instead of butter but got complaints they were too “coconuty” go figure

-Salad (romaine lettuce, macadamia nuts, peppers, cranberries, grape tomatoes, homemade Balsamic vinaigrette)

Dinner

-Paleo Taco Bowl (ground turkey taco meat, small baked sweet potato, romaine lettuce, grape tomatoes)

-small cup of Orange Juice with 1 spoon of chia seeds

Snacks

-small piece of dark chocolate

-pineapple, apple, orange

-2 eggs scrambled and a verrryyy small bowl of rice porridge (I’m starting to feel crummy too so it’s a must)

 

Here’s 1 week until the end of the challenge and 2 weeks until Valentine’s day!

-Paleo Taco Bowl (ground turkey taco meat, small baked sweet potato, romaine lettuce, grape tomatoes, salsa)

-cup of fresh pineapple (yum!)

-Yogi Chai Rooibos tea

-1 whole package of olive oil nori

-handful of baby carrots

-some more pinepaple

-Trader Joe’s Just Dried Apricots (they were yuck-ville so I sprinkled some li hing powder on it (not paleo!)

-handful of pistachios (luckily un-shelled so I stopped myself)

-Bowl of Italian sausage and Kale soup

-Salad (romaine lettuce, grape tomatoes, macadamia nuts, homemade balsamic vinegarette)

 

Dinner

-Roast pork chop with sauteed zucchini and steamed broccoli

-oranges and apples

 

Semi Cheat

With a sick person in the house, I made some rice porridge (ground pork, rice, potato, peas) and snuck a small bowl of it cause I’ve been feeling pretty crummy too and it looked too good to pass up!

-“Fried rice” with sauteed zucchini, stir-fried beef, grape tomatoes and a fried egg on top

-big plate of kale chips while watching Twilight..the 2nd to last one

1 banana with spoon of almond butter

-Yogi Goji Berry Green Tea

Lunch

-“fried rice” with some thai ground turkey on top (ground turkey, soy sauce, and thai basil)

Dinner

Mexican Chicken soup with half an avocado

 

On a whim I attempted to make some banana pancakes. It was super easy and very banana-y! If I think about it enough I’m just eating a banana-y omelet. I could’ve put some almond flour in it to make it more “pancake” like but didn’t want something too heavy.

-“fried rice” with stir-fried beef and bean sprouts (seasoned with salt and pepper)

crazy tuesday

Like always, the first week back to work from “vacation” (thanks to 2012 snowpocalypse) is always a crazy one. Yesterday was definitely Manic Monday and Tuesday, well…it was damn crazy. So much catching up to do with so little time! Siiiiigh.

But I shouldn’t complain because as much effort and time I put into my work, I love my job and every ounce of my sweat, blood, tears and energy is worth it! Tonight proved exactly why I do what I do. I attended a city council meeting earlier tonight and it was rewarding watching some of my students speak to the council about the importance of tobacco-free parks. Definitely made my heart smile! 🙂 Hoorah for youth and student empowerment!

Breakfast
– Smoothie (spinach, 1/2 banana, frozen blueberries, almond butter, water)

Lunch

Leftovers: tilapia fillet seasoned w/ garlic & herbs, steamed broccoli

Dinner

Garlic & herb chicken sausage w/ onions, cooked in coconut oil.
Scrambled eggs w/ garlic, cayenne, parsley and spinach.

Dessert: paleo coconut fudge

Snack
– 12 oz. Americano (my first coffee of 2012!)
– mandarins
– raw almonds
– Trader Joe’s pitted prunes (non-sorbate)

Breakfast

-1 banana with handful of raw almonds

-Trader Joe’s Sugar and Spice Black Tea

Lunch

-biiig container of stir-fried “noodles”

-3/4 Fuji apple

Dinner

-Mexican Chicken soup with guacamole on top (avocados, lime juice, salt, Sriracha)

-last small piece of banh tet with cha

-apples and oranges

Snacks

-1 baked sweet potato (scrubbed clean and baked for 35 minutes at 325 degrees). Oh man…it feels good to eat something starchy and this sweet potato tasted so sweet! It was pretty much my dessert.

-small cup of Smoothie

 

I think I may eat a small bowl of “fried rice” later….I wrote this post to detract me from doing so, we’ll see how that works.
