Woooo! It’s the first of the month. I can’t believe it’s already February! Today marks only 1 week left of our Paleo Challenge!
Lunch
-1/2 piece of roasted pork chop
-sauteed zucchini
-“mashed potatoes” (steamed cauliflower, bit of butter, coconut milk, salt and pepper blended up until smooth). I’ve tried to make these before with coconut oil instead of butter but got complaints they were too “coconuty” go figure
-Salad (romaine lettuce, macadamia nuts, peppers, cranberries, grape tomatoes, homemade Balsamic vinaigrette)
Dinner
-Paleo Taco Bowl (ground turkey taco meat, small baked sweet potato, romaine lettuce, grape tomatoes)
-small cup of Orange Juice with 1 spoon of chia seeds
Snacks
-small piece of dark chocolate
-pineapple, apple, orange
-2 eggs scrambled and a verrryyy small bowl of rice porridge (I’m starting to feel crummy too so it’s a must)
Here’s 1 week until the end of the challenge and 2 weeks until Valentine’s day!
